Spider Eggs

Ingredients

  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/4 tsp smoked paprika
  • Salt & pepper to taste
  • 1/4 cup radish sprouts (mixed whole into the yolk filling)
  • 12 black olives, halved (for spider bodies and legs)

Instructions

  1. 1. Peel the eggs and slice them in half lengthwise. Remove yolks and place in a bowl.
  2. 2. Mash yolks with mayonnaise, mustard, lemon juice, paprika, salt, and pepper until creamy.
  3. 3. Gently fold in the radish sprouts (whole, not chopped).
  4. 4. Spoon or pipe the yolk-sprout mixture back into the egg whites.
  5. 5. Place half an olive on each egg as the 'spider body.' Slice the remaining halves into thin strips for 'legs.'
  6. 6. Chill before serving.
