Spider Eggs
Ingredients
- 6 hard-boiled eggs
- 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1/4 tsp smoked paprika
- Salt & pepper to taste
- 1/4 cup radish sprouts (mixed whole into the yolk filling)
- 12 black olives, halved (for spider bodies and legs)

Instructions
- 1. Peel the eggs and slice them in half lengthwise. Remove yolks and place in a bowl.
- 2. Mash yolks with mayonnaise, mustard, lemon juice, paprika, salt, and pepper until creamy.
- 3. Gently fold in the radish sprouts (whole, not chopped).
- 4. Spoon or pipe the yolk-sprout mixture back into the egg whites.
- 5. Place half an olive on each egg as the 'spider body.' Slice the remaining halves into thin strips for 'legs.'
- 6. Chill before serving.
