Warm Avocado Pasta
Ingredients
- 1oz sunflower shoots
- 8oz farfalle pasta (or your preferred type)
- 2 ripe avocados
- 1 garlic clove (or 2 if small)
- 1/2 cup spinach or basil
- 1 tablespoon olive oil
- 1/2 lemon, juiced
- 1–3 cups reserved pasta water

Instructions
- 1. Cook the pasta according to package instructions. Once ready, drain but reserve the cooking water too.
- 2. In a blender, add all remaining ingredients including 1 1/2 cups of the reserved pasta water.
- 3. Blend until smooth and creamy. If it is still too thick, add more pasta water to loosen.
- 4. Mix the blended sauce with the pasta until everything is well combined.
- 5. Serve warm and enjoy!
