Warm Avocado Pasta

Ingredients

  • 1oz sunflower shoots
  • 8oz farfalle pasta (or your preferred type)
  • 2 ripe avocados
  • 1 garlic clove (or 2 if small)
  • 1/2 cup spinach or basil
  • 1 tablespoon olive oil
  • 1/2 lemon, juiced
  • 1–3 cups reserved pasta water

Instructions

  1. 1. Cook the pasta according to package instructions. Once ready, drain but reserve the cooking water too.
  2. 2. In a blender, add all remaining ingredients including 1 1/2 cups of the reserved pasta water.
  3. 3. Blend until smooth and creamy. If it is still too thick, add more pasta water to loosen.
  4. 4. Mix the blended sauce with the pasta until everything is well combined.
  5. 5. Serve warm and enjoy!
