Warm Lemon Broccoli Sprout Pasta

Ingredients

  • 1 cup broccoli sprouts
  • 6 oz spaghetti or linguine
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: red chili flakes

Warm Lemon Broccoli Sprout Pasta

Instructions

  1. 1. Bring a pot of salted water to a boil and cook the pasta according to package directions. Reserve about 1/4 cup of the pasta cooking water before draining.
  2. 2. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. 3. Stir in the lemon zest and fresh lemon juice and cook briefly to blend the flavors.
  4. 4. Add the drained pasta to the skillet along with a splash of the reserved pasta water. Toss gently to coat.
  5. 5. Remove the skillet from heat and fold in the broccoli sprouts so they remain fresh and crisp.
  6. 6. Sprinkle with grated Parmesan and season with salt, black pepper, and optional chili flakes. Serve immediately.
